This episode so moved me. My guest Mr. Hans Luttmann is the Managing Partner and Director of Hospitality for the San Julian Restaurant Group in Los Angeles.
His restaurant is called Rossoblu, a concept bringing to life the rich legacy of cooking and viniculture of the Emilia-Romagna region of Italy. Even the pasta is hand-crafted by a master artisan brought in from Bologna. Hans is far from a figurehead. He’s a truly hands-on soulful leader that motivates his team from the deep love of running truly great restaurants. The passion of Rossoblu is contagious and instilled in each member of the staff. The guest can’t help but feel there’s some magic happening here.
Hans and I speak about cultivating and nurturing a great staff, the importance of daily training, maintaining the all-important financial controls, creating a warm inviting ambiance that captures the diner’s imagination and the marketing strategy that defines the brand.
