When I started my first restaurant I instinctively knew that to succeed I had to stand out from my competition and that meant dazzling my customers.
It all started with plate presentations. Every dish had to have what I call “WOW Factor”. That is, when the plate was presented to the customer, they were amazed and exclaimed “WOW” to the other guests at their table. This was all about perceived value in the portion size, the look, the aromas, the garnish and just as importantly the plate the meal was served on. This standard applied to every appetizer, entree, side or dessert, and it was up to every kitchen or service staffer to make sure every plate was perfect before it was delivered to the customer.
Next, we looked at every area of our restaurant that the customer could see or experience. From the parking lot to the bar to the bathrooms, everything about our restaurant was designed with “WOW Factor” in mind.
